Dirty Dandy Chai Healthy Cake

Ingredients

For the Cake:

  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 tsp Little Wildling Co Dirty Dandy Chai
  • ½ cup unsweetened applesauce
  • ½ cup Greek yogurt (or a dairy-free alternative)
  • 4 large eggs
  • ½ cup honey or maple syrup (optional, for sweetness; can be omitted or reduced)
  • 1 tsp vanilla extract
  • ½ cup almond milk (or any milk of choice)

For the Chai Glaze (optional):

  • ½ cup Greek yogurt
  • 2 tsp honey or maple syrup (optional)
  • 1 tsp Little Wildling Co Dirty Dandy Chai
  • A pinch of cinnamon for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine the almond flour, coconut flour, baking powder, baking soda, salt, and Dirty Dandy Chai. Whisk together until well mixed.
  3. Combine Wet Ingredients: In another bowl, mix the applesauce, Greek yogurt, eggs, honey (if using), and vanilla extract. Whisk until smooth.
  4. Combine Wet and Dry: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Add the almond milk and mix until the batter is smooth and well incorporated.
  5. Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool the Cake: Once baked, remove from the oven and let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  7. Make the Chai Glaze (Optional): In a small bowl, mix the Greek yogurt, honey (if using), and Dirty Dandy Chai until smooth. Drizzle over the cooled cake and sprinkle with a pinch of cinnamon for garnish.

Storage:

Store any leftovers in an airtight container in the refrigerator for up to 5 days. This cake can also be frozen for up to 3 months. Just ensure it's well-wrapped to prevent freezer burn.
